I am ALL for easy recipes because who really has time these days to make a crazy elaborate meal.. not me that’s for sure! This is a quick and easy – healthy meal that anyone can make. It definitely screams BRUNCH to me! So breakfast, lunch OR even dinner if you are crunched for time, this is a great meal to make! Directions are below, I hope you enjoy!
* 2 Large sweet potatos (halved lengthwise)
*OPTIONAL TOPPINGS: Sliced scallions, hot sauce, chorizo, bacon bits, cheese.. etc.
In microwave, cook potatoes until tender, 5-9 minutes. Scoop 1/4 of the flesh from each half (save for another use). Season halves with choice of seasoning. Transfer to baking sheet. Crack in eggs. Bake at 375* just until egg white set, about 14 minutes.
Above I used Cayenne pepper and garlic and herb to season the potatoes and topped in with hot sauce and then added salt and pepper to taste. You can use whatever you want to season it with and top it with breakfast meat for added protein!
